- Ladakhi Apricots (Sham Valley): Sun-dried at 3,000+ metres. No sulphur dioxide. Dark brown, intensely flavoured. Seedless and with-pit varieties available.
- Kashmiri Raisins (Kishmish): Green (kesari kishmish) and black varieties. Naturally dried from Kashmiri grape varieties. Distinct flavour from commercial raisins.
- Chilgoza (Pine Nuts): From the Pinus gerardiana forests of southern Kashmir and Kinnaur. Rare, expensive, harvested from wild trees. Available in season (October–November).
- Kashmiri Dried Figs (Anjeer): Smaller and more intensely flavoured than Turkish figs. Wild-harvested from Kashmir valley trees.

- Shahi Jeera (Black Cumin / Kala Zeera): Smaller and more aromatic than regular cumin. Used in Kashmiri Wazwan cuisine. Distinct enough to be considered a separate spice entirely.
- Asafoetida (Heeng) — Kashmiri resin form: Raw asafoetida resin, as opposed to the compounded powder. Much stronger and more authentic. Rare in the Indian market.
- Kashmiri Dried Lotus Seeds (Phool Makhana): Grown in the Dal Lake area. Considered superior to Bihar makhana in Kashmiri cuisine.
